1.中筋粉和全麦粉,加入酵母,混合在一起。

2.少量多次加入常温水。

4.超市买的普通梅菜干用水浸泡开,旁边颜色黄的自制梅菜,四川俗话叫“盐菜”跟梅干菜是差不多的东西,是外婆做的,也用清水泡开。

5.八分瘦两分肥的猪肉,改刀切块。

6.手剁成肉糜。

7.姜末和葱节准备好,小葱叶切花,葱白切节备用。

8.两种梅干菜清洗两遍去去盐分,用手挤干,再改刀剁碎些,备用。

9.锅里放入适量油,放入葱节,小火炸。

13.翻炒到肉糜五分熟。

14.放入生抽。

16.放入梅菜,尝咸淡,加少许盐分调节,即可关火。

17.炒好的肉馅盛出来,撒葱花,拌均匀备用。

20.分成小面剂子,压扁擀开呈圆片,包上馅,捏出褶子。

21.冷水上锅,上汽后改中火,蒸15分钟。

小窍门&温馨提示
因个人口感原因,不喜欢肥的肉馅,所以做得比较瘦,如果你不介意可以增加肥肉的比例
梅干菜,在四川一些地方俗话叫“盐菜”,常常被叫做“盐菜蒸肉”“盐菜砸肉”等等,跟“梅菜扣肉”是差不多的东西,你可以就用超市卖的梅菜干做也很不错,提前用水泡开即可
咸淡要尝尝,以免加盐多了
